This coffee was grown by Jairo Arcila at the farm Villarazo. Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila. Jairo’s first job was at Colombia’s second-largest exporter, working as their Mill Manager for over 40 years until his retirement in 2019.

This lot was exposed to aerobic fermentation for 24 hours. Later, the cherries were placed inside grainpro bags for 200 hours maintaining a temperature below 22 C and adding CO2. Then the coffee was placed on raised beds at a temperature below 35 C until ideal moisture content was achieved.

This micro-lot is 100% Pink Bourbon. This varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila. 

Up front the coffee will give you a heavy winey flavour.  This is followed by the perfect contrast of a pomegranate, fruity acidity. Each sip will leave a sweet syrupy mouthfeel with a strong finish of stewed black doris plum. The mix of medium acidity and a heavy sweetness results in an extremely delicious and balanced cup of coffee.
